The room is dressed like an old Parisian brasserie: marble-topped tables, dark leather booths, a wall of vintage absinthe and cognac posters, and a brass gramophone standing on a side table.

It is a set as much as a dining room, and it commits to the bit without becoming a theme.

Chef Giovanni Galeota built his approach on his own grandmother's cooking, carried through kitchens around the world before landing at Marmo Bistro — exceptional ingredients and time-honoured technique, over novelty.
