It sets the tone for the kitchen: this is street food and roadside cooking, dressed up.
The tandoori grill runs Kashmiri lamb chops, wagyu beef cheek and a whole tandoori spread meant for a table sharing. A caviar-topped pani puri opens the small plates, and the bread course runs from a stuffed wagyu kulcha to a plain naan, all baked to order.
