The wall behind the table is the room.
Shelves run to the ceiling, every jar labelled, brass measures and lidded pots ranged between them, and one lamp hangs low over dark wood.
The class is built around whoever turns up. A first-timer is taken through it slowly, somebody who already cooks is pushed harder, and both of them leave having made the food rather than watched it being made.
Come in the evening and it is a dining room instead, with the chef working a metre from the table, talking the whole time and answering whatever you ask.
