Nobu's terrace on the twenty-second floor at dusk, cane chairs at walnut tables under a slatted roof hung with gold lanterns, a fig leaning into the frame, and the whole Dubai skyline coming on across the water.

The restaurant is not one room.

Private dining is held apart from the main floor, and there is a separate lounge laid out for a party rather than a dinner.

At the counter, nigiri and sashimi are priced by the piece, so a table can eat 3 things or 30. For anyone who would rather not decide, the chefs put up a selection of their own.

There is also a tasting menu, a section of A5 wagyu where you choose the preparation, and a plant-based list of its own.
