The Surin Phuket

The turning off the coast road is easy to miss and the lane down is single-track, which is the first thing this place tells you about itself: Pansea is a small bay with two hotels on it and no public way to the sand, so the beach in front of it is used by the people staying there and by almost nobody else. The lobby is a shingled pavilion open on two sides with the sea below it through the trees, and the granite underfoot is the grey stone that runs through the whole property — floors, walls, the steps. There is no lift here and there has never been one. Every rebuild since 1982 has left that alone on purpose, so you are taken to your cottage down a sequence of timber walkways and stairs cut into the slope, under coconut palms and frangipani, past roofs at 4 different heights. It is 15 minutes from Surin village, 25 to Patong over the headland, and about 45 from Phuket International.

Everything here is one storey and everything has a terrace, and where you sit on the hill decides what the terrace looks at. High on the ridge the Hillside Cottages are inside the canopy with nothing but treetops in the frame and the cicadas starting at 6. Below them the Superior Cottages open onto shaded walkways of banana and frangipani; below those the Deluxe Cottages catch the Andaman through a gap in the palms. The Pool Villas stand furthest up and furthest apart, each on its own with a sala and an infinity edge cut into the jungle. And at the bottom, on the sand itself, the Beach Suites and Beach Deluxe Suites open through sliding wooden doors onto terraces the tide comes to. The rooms are cool and grey and pale — granite underfoot, white-beamed vaults overhead, bamboo blinds, a window seat with a polished red sill running the length of the bay window and a tea tray set on it. At about 6 the light goes off the water, the lanterns come up along the stairs, and the whole slope turns into a set of lit roofs in the trees.

The longest-serving staff are called The Surin Stars, and the tenures are the real story: 29 years for the maintenance supervisor, 15 for the guest relations manager, 12 for the head of food and beverage. On a property with no lift, no lobby lounge to loiter in and 109 cottages spread over a hillside, that continuity is what makes it work — somebody knows which cottage is shaded at 4, which walkway floods in a downpour, and which of the 9 Beach Deluxe Suites has the shortest walk to the water. Nothing here is dressed up. What arrives in the cottage without being asked for is a beach bag, two hats, flip-flops, an espresso machine, a bluetooth speaker and a pillow menu. What does not exist here is a kids' club or a shopping arcade.
