Machan

Dishes here are named for Sundarban, Bandhavgarh, Kaziranga, Kanha and Periyar, and the sections they sit in are Pre Hunt, At the Bonfire, Meals on a Machan and Open Fires at Safari.

The menu is a forest, on purpose.

Breakfast is where it turns local. The morning trails are Delhi neighbourhoods on a plate: Old Delhi street food on one, the bakery lanes of Ballimaran on another, and a colonial hotel breakfast of scrambled eggs, smoked salmon and hash browns on a third.

One kitchen cooks a Thai curry, a Tuscan bean soup, a Hungarian lamb broth, pizza, pasta and an Indian list in copper pots, all off the same menu.
