The tea is the reason to sit here, and it is ordered by garden rather than by colour: Margaret's Hope and Jungpana out of Darjeeling, Harmutty and Halmari out of Assam, a Nilgiri off a single estate at Kodanad.

The coffee is mostly Indian and mostly single-estate — Araku, Chikmagalur, Coorg, Wayanad, Travancore — with a monsooned Malabar low in acid that tastes of clove and cedar. Jamaica and Colombia are further down the same list.
After 4 the room turns. The tea and the coffee start showing up in the cocktails: a Darjeeling with bourbon and honey, a sencha with white rum and mint, an espresso martini.
