The dune is the usual answer and not the only one.
The table is laid at whichever spot on the property has been picked for the evening, and where it goes is settled with you beforehand rather than on the night.
Two set menus stand behind it, one Middle Eastern and one international. The third route is to sit down with the chef first and build the dinner yourself, which is what the name is about.
A butler stays with the table for the whole evening. It is the one meal here where nobody else comes near you.
