The list runs in 4 acts, the shape of a Kabuki play.
Jo opens light and deliberate. Ha builds the complexity. Kyu is the peak, bold and dramatic. Kiri closes it, quieter than it began.
The names come from the same place. Reverberation of Koto and Echo of the Shamisen are built on instruments, Yuki-Onna is named for the snow spirit, and Ghost Light for what is said to linger in the shadows of a stage.
Only one drink stands outside the 4 acts. The Kabuki Highball is frozen whisky, cascara and citrus, carbonated to order, and you choose the tincture that goes into it: ginger, bergamot, burnt cedar, sakura, black sesame or yuzu peel.
A DJ plays from early evening, and the sound moves from melodic and slow towards soulful house as the night goes on.
