A candlelit rooftop terrace with low tables and armchairs beneath a Moorish stone archway, the Dubai skyline and the Burj Khalifa lit at dusk beyond the railing.

The bar is one shell-shaped form set in the middle of the roof, and the tables run out from it to the edges.

The sea is on one side and the skyline on the other.

Caviar is sold by weight, and the oysters come 2 ways — farmed locally at Dibba Bay, or Gillardeau from France.

The roof is never a room you wander into: every evening on it is booked ahead. Nobody under 21 is admitted after 11 at night.
