The dining room is drawn from the original Bvlgari hotel in Milan, and 2 decisions shape it.
The banquettes are raised so that every table looks at the Arabian Gulf rather than at the table in front of it. The ceiling above them is black, which makes dinner feel as though it is happening outdoors after dark.
Beyond the à la carte there are 2 tasting menus, one of 5 courses and one of 8, and each is ordered for the whole table rather than for one person at it. The shorter of the 2 is the vegetarian one.
The kitchen buys as close to home as it can. The eggs, the salad leaves and the herbs are all grown in the Emirates, and the tuna carries a sustainable-fishing certificate. There is a private dining room off the restaurant, and it is where the wine tastings are held.
