The room is a minimalist box, and you come into it through a tokonoma — an entry room — rather than off a corridor.
Inside are 2 counters. Each can be taken on its own or both together, in which case the restaurant is yours for the evening. The glazing looks out over the Dubai skyline.
Edomae sushi is the style of old Edo, the city that is now Tokyo, and it is what these 2 counters do. Everything comes from Japan. Sugiyama keeps his own relationships with the producers and speaks to them every morning, which Dubai's time zone makes easy.
There are 3 menus and they differ in length rather than in kind. Kohaku is an appetiser, about 10 pieces of sushi, miso soup and a Japanese omelette. Hisui opens with 5 appetisers instead, sashimi among them. Ruri opens with 7 and takes the premium sushi. Lunch offers all 3, dinner the upper 2, and the private room serves Ruri.
