The list runs in 4 sections — a house selection built on what grows on the estate, a run of bartender originals, the classics done straight, and a shooter list for later in the evening — before it opens into a serious spirits room: single malts running up to 18 years old, cognac and bourbon by the glass, and wine by the glass and the bottle.

A short food menu runs alongside the drinks: vegetarian small plates and a handful of grilled or fried non-vegetarian ones, built for the table rather than a full dinner.

Alcohol is served only to guests 25 and older, and the standard pour here is 30 millilitres.
