The room is dressed for a 1920s Malayan plantation: rich earthy colours, and a bar two storeys high with the bottles ranked behind the counter.
Brushing peanut shells onto the floor is the one place in the hotel where making a mess is the custom rather than an accident. The habit has run unbroken since the rubber planters who first did it here on weekends in the 1900s.
Every Singapore Sling here is built on Brass Lion Singapura Gin, a Singapore-distilled spirit — Ngiam Tong Boon's own 1915 recipe blended gin with pineapple, lime, curaçao and Bénédictine, coloured rosy to disguise it as fruit punch, at a time etiquette barred women from drinking alcohol in public. Golden Milk Punch, on the Straits and Signature list, is a tribute to Rudyard Kipling, who visited in 1889.
Singapore Sling Day runs every 27 June, and the first 100 guests to bring a whole pineapple that day exchange it for a complimentary Sling.
