The cocktail list runs through nearly 3 centuries of the hotel's history — the people who passed through it, and the moments it sat in the middle of — and the drinks are named for them.
Alan Taudon reworked the tapas to go alongside, built to share over a round rather than to be a meal.
It is a Parisian address before it is a hotel bar. Dogs up to 10 kilograms are welcome at the table. Shorts and flip-flops are not.
