Philip Bischoff, Berlin-born, found mixology at nightclubs and special events before running the bar at Manhattan in Singapore, one of Asia's better-known cocktail rooms.
His own programme here pulls from Mexico City's own places, people and parties rather than a generic tropical-bar carte.
The snack menu runs from a Hamachi ceviche finished with passion fruit to Kaviari Kristal caviar with buckwheat blinis, and the oyster list is priced by the 3 or the 6, matching the pace of a room built for staying rather than passing through.
