The classic afternoon tea is sandwiches and scones, with cream and jam; a Goan version sits alongside it, in the resort's own reading of local flavour, and there is a vegetarian tea as well.
Beyond the pot that comes as standard, a longer list of specialty teas is there to choose from.
The Bloody Mary dates to the St. Regis in New York, in 1934. Here it becomes the Goan Mary, worked with recheado masala — the spice paste Goan kitchens have stuffed into seafood for generations before frying it. A masterclass in making one runs on request.
