Tales of Asia works the region into the glass: laksa leaf in a cognac cocktail, curry leaf in a vodka fizz. Whispers of Heritage looks back, to the pineapple plantations on Palawan Ridge and to 2 Alaskan cocktails from the 1890s.

Table snacks run from a porcini arancini to a grilled stingray fin, built to share rather than to precede a separate dinner.
