Niko Romito's pastries are single portions, each based on a traditional recipe from a different region of Italy and made lighter, with less animal fat and less added sugar.
They come on colourful Ginori 1735 plates. Start with the cannoncino, caramelised puff pastry filled with pistachio cream.
Afternoon tea brings small versions of the pastries with savoury bites, and a glass of British sparkling wine if you want one. The Japanese teas are organic, from Kitano Chaen in Ureshino, in Saga Prefecture on Kyushu. For coffee, ask for a caffè shakerato, sweetened with Okinawa brown sugar.
