The cocktail list is built as 3 ideas rather than a straight menu: Land and Locale draws on the produce of wherever the ingredients come from, Movement takes its cue from never staying anywhere long, and Community is built on finding people who share your interests.
Under Land and Locale, gin gets mixed with earl grey tea, star anise and lavender in a cocktail named for the peacock, and a second pairs white rum with orange juice, cinnamon and clove.
The gin shelf runs deep into Indian craft distilling — Jodhpur, Jaisalmer, Hapusa, Terai, Kumaon & I, Greater Than, Strangers & Sons — set beside the usual European names rather than apart from them.
