The stepwell below is Toorji Ka Jhalra, cut in the 1740s on the orders of a queen of Maharaja Abhay Singh, continuing a tradition of royal women commissioning public water works.
A restoration has since uncovered more than 200 feet of hand-carved rose-red sandstone, with dancing elephants, lions and water-spouts cut into the stone.
Its original mechanism was a Persian wheel turned by bullocks, and it is still counted as part of the walled city's own water network today, though a neglected part of it.
The café overlooks the well, and the square around it that has become a gathering point for the neighbourhood since the restoration.
