The show kitchen at the centre of the room is built around bright copper chimneys and cast-iron ovens, worked by a team large enough that the counter rarely goes quiet.
Seating spreads out from it into a few different registers: long family tables built for a group, an intimate courtyard terrace, and an open veranda onto the gardens of Arabian Court.
Breakfast is the busiest hour and the reason for it — the room fills early and thins out well before 11. Dinner runs Middle Eastern and European dishes side by side, built on fresh, local herbs and spices, which reads closer to a neighbourhood table than a hotel dining room.
