Once the sun is down, the Burj Al Arab shows lit blue through a gap in the palms.
Elias Samaan leads the kitchen, more than 10 years into a career spent entirely at Jumeirah, and the food is the Lebanese cooking he grew up eating rather than a broader Middle Eastern menu.
