Peter Marino built the room around two references at once — the spirit of la dolce vita, and the glamour of Venice's own Art Biennale years in the 1950s and 60s.
The dining room sits close enough to the water that the light off the lagoon shifts through a meal, rather than staying fixed behind glass.
The lighting stays low through service, so the lagoon outside does more of the work as the sky changes colour over the course of dinner.
A sommelier works the pairing rather than leaving it to a printed list, running glass by glass through both the tasting menu and à la carte, with a non-alcoholic route offered alongside.
