The European one goes antipasto, soup, a sorbet to clear the palate, pasta or pizza, then a main. The Indian one runs in 5 stages, opening on a course called Agaz, 'the beginning', and one of its stages is slow-cooked, built around a recipe passed down from the Nizam's kitchens.
