The room is built rough on purpose: tables cut from unfinished wood, stools rather than chairs, and the tandoor worked in the open at one end, so the bread going in is part of the evening.
The kitchen goes back to Bukhara, which opened at ITC Maurya in 1978. The recipes have not been changed since.
A set menu and a menu written for a single diner run alongside the main list, and gluten-free dishes are cooked here. A private dining room takes a table that wants the door closed, and the bar has its own mixologist. Dinner for two comes to about ₹3,000.
